We love pie in this household, and I love baking easy things. 🙂 This pie was a version of the Blackberry Pie found is the wonderful cookbook, Me, Myself, and Pie by Sherry Gore. The pie crust was made from the recipe in this cookbook (another favorite). Pie crust takes mere minutes to make and is SO MUCH BETTER than stuff from the store. This is especially important when the pie is simple, because the crust is a large part of the flavor profile. Sometimes, I make multiple crusts to stash in the freezer.
My crust pinching skills aren’t the best, but the taste is amazing! We’ll just call it “rustic”. 🙂 Pies are the perfect way to use up bits of fruit.
