I have a lot of cookbooks. It’s very true. Of those books, I have my favorites. They are the ones I turn to when I need food in a pinch or know I can trust the outcome. Nigella Express by Nigella Lawson is among that group of favorites. Besides being British, having a wonderful vocabulary and elegance, she makes great food that people can relate to and take pleasure in.
We eat to live, but we might as well enjoy it! I had some bananas that were only good for baked goods, so I skimmed through my book. I knew she would have a quick and easy recipe to help out my bananas to have a better life.
I settled on these Banana Butterscotch Muffins:
I didn’t have butterscotch chips, so I substituted mini chocolate chips. I also made them gluten free by substituting Bob’s Mill 1 for 1 Gluten Free Baking Flour. Easy-peasy!
They turned into this:
